This recipe for Halloween cupcakes is easy and versatile.  You can make everything from scratch or use box mixes.  No judgement…just fun for Halloween!!  These cupcakes are part brownie, part cupcake, and all totally delicious!   The frosting is an easy standard buttercream and you can color it any which way you like.  As you can see in the photos, I left some of it plain and colored the rest.  You can also add your favorite Halloween candy as a topping.  See, I told you…super fun!

Chili con Carne

Now that football season is in full-swing, all those cravings for football food are back!  The first being chili.  A perfect weeknight dinner during football time is chili con carne.  It’s super easy to make and you can either eat it right away, let it simmer for an hour or so, or make it in advance and heat it a day or two later.  The stars of this recipe are ground beef, kidney beans, and of course chili powder.  The recipe feeds 4 so if you have a bigger crowd, just double or even triple the recipe.

Chicken and Rice Casserole

Chicken and rice casserole

This chicken and rice casserole can be made ahead of time and with any combination of vegetables you like.  I happened to have broccoli, carrots, celery, and onions on hand.  It’s a super way to use up leftover chicken and it’s such a nice comfort food.  The kids absolutely love it and it’s perfect for us if it’s made in advance, say on the weekend, and just heated up on a weeknight.
