    Easy Slow Cooker Pot Roast

    Nothing smells better than walking in the door on a crisp autumn day than this easy slow cooker pot roast recipe. Take the time to sear the meat as it lends a hearty flavor to the gravy and vegetables. Keep it simple with carrots and potatoes and you have a perfectly nutritious weeknight dinner.

    Easy Slow Cooker Pot Roast

    Gather up your ingredients.

    Easy Slow Cooker Pot Roast Ingredients

    Rinse the chuck roast, pat dry and season with salt and pepper. 

    Warm a large skillet on medium-high and add avocado oil. When oil begins to shimmer, add the roast, searing on all sides, about 10 minutes total.

    Sear the Roast on All Sides

    While the roast sears, chop the carrots and potatoes and add them to the bottom of the slow cooker. Top with the roast, pour in the broth, add the garlic, sprinkle in the thyme, and set on low for 8-10 hours.

    Place the roast on top of the vegetables

    NOTE: If you would like a thick gravy with the pot roast, add 2 tablespoons of flour to 2 tablespoons of cold water and stir to make a slurry. Turn the slow cooker on high for the last 30 minutes of cooking and add the slurry. Mix it all around and it will thicken the gravy.

    Ingredients

    3-4 pound chuck roast
    2 tablespoons avocado oil
    ½ tablespoon Kosher salt
    1 teaspoon black pepper
    1 teaspoon dried thyme
    2 cups carrots cut into 2" pieces
    2 cups Yukon gold potatoes cut into 2" pieces
    2 cloves garlic, minced
    2 cups beef broth
    2 tablespoons white flour (optional for thick gravy)
    2 tablespoons cold water (optional for thick gravy)
    ¼ cup minced parsley (optional for garnish)

    Nutrition information is calculated for a 3.5lb. chuck roast and the optional flour for gravy is not included.
