This easy sugar cookies recipe is just that...super easy and the cookies are SO delicious. If you are in the mood for a sweet treat and don't want to spend a lot of time in the kitchen, this recipe is for you. The dough does not require chilling before baking so you just mix up the batter and you are good to go. I like to use a small cookie scoop to keep the size uniform. When the cookies are ready, they look and taste like they are from a bakery.

Gather up your ingredients.

Preheat the oven to 375 degrees and line baking sheets with parchment paper.
In a large mixing bowl, whisk together the flour, baking soda, and baking powder. Set aside.

In a mixer bowl, cream the butter until light and fluffy, about 2 minutes. Slowly pour in the sugar, scraping the sides as necessary. Add the egg and vanilla.

Mix until well incorporated.
Slowly add the dry mixture to the wet, mixing until combined but not over-mixed.
Use a small cookie scoop (or a teaspoon to scoop the dough and use your hands to roll it into a ball).

Bake for 8-10 minutes. Cookies are ready when the edges just begin to turn golden.
Let the cookies sit on the baking sheet for about 5 minutes before removing them to a cooling rack.

Sugar cookies will last up to a week in a sealed container. They do not need to be refrigerated.
