Do you have a garden that is just overflowing with fresh peppers? I hope so. The farmers markets are just bursting with these colorful beauties right now. They are fat, juicy, and crispy. I bought a whole bunch the other day and then after I brought them home and washed them, remembered that only my daughter and I like them so we came up with this creative little salad that lured in the cheese lovers of the house. The men in the house love cheese and we even got them to eat some of the delicious peppers thanks to a nice balsamic dressing we drizzled over the top.
To make the salad, you can use any kind of bell peppers you like. The green ones seem to be the most bitter so if you only like them sweet, go with one of the other bright colors. Either orange, red, or yellow. Or all of them. We used them all. You can buy fresh mozzarella that’s already sliced or you can slice it yourself. My grocery store charged more for the already sliced fresh mozzarella so I went ahead and sliced it myself. The balsamic dressing we drizzled over the top was just 1 part olive oil, 2 parts balsamic vinegar, salt and pepper to taste.Print

3 large colorful bell peppers (red, orange, or yellow)
1 cup sliced fresh mozzarella cheese
1 tablespoon olive oil
2 tablespoons balsamic vinegar
