Funfetti Cookies

This easy funfetti cookies recipe is a cake cookie made with boxed cake mix and adds rainbow sprinkles to spruce it up even more. It’s super simple to make and tastes great! The recipe comes together quickly with just six ingredients.

Ingredients for Funfetti cookies

Preheat the oven to 350 degrees and line two baking sheets with parchment paper.

In a large bowl, whisk together the Funfetti cake mix and baking powder. Set aside.

To a large mixer, add eggs, butter, and vanilla. Mix on medium until well-combined. Turn the mixer to low and slowly add the dry ingredients to the wet. Stir in the rainbow sprinkles.

Use a medium cookie scoop to scoop the dough and add to the parchment lined cookie sheet, keeping the cookies about 2 inches apart.

Bake for 12 minutes, or until the edges just begin to brown. Remove from the oven, let cool on the cookie sheet for 5 minutes, then remove to a wire rack to finish cooling. 

Store completely cooled cookies in an airtight container or sealed plastic bag for up to one week. Cookies can also be be frozen in a sealed freezer bag for up to 3 months.

Hint: When storing cookies in containers, I will often re-purpose the used parchment paper to separate the layers of cookies, that way they don’t stick together. This works if you are leaving the cookies out at room temperature and it saves a freezer bag if you want to freeze them. Freeze flat, in layers, separated with the parchment paper.

If you’d like to mix it up a bit, you can try other box cake mix flavors like vanilla or birthday cake. If you do use a different kind of cake mix flavor, be sure to compensate by adding extra rainbow sprinkles. I’d recommend doubling the amount.
