This healthy Greek pasta salad is chock full of veggies and flavored with a tangy red wine vinaigrette dressing with sprinkles of salty feta cheese and sliced Kalamata olives. It’s a perfect make-ahead dish for lunches, a side for dinner, or a potluck.

Gather up your ingredients.

Cook the pasta according to package directions, then drain and rinse with cool water.

In a small bowl, whisk together the red wine vinegar, olive oil, lemon juice, Kalamata olive brine, dried oregano, Kosher salt, and black pepper.

In a large bowl, combine the pasta, cucumber, grape tomatoes, red onion, bell peppers, and Kalamata olives.

Pour the dressing over the pasta and toss to coat. Sprinkle with feta cheese.

NOTE: This salad can be made a day or so ahead of time. In fact, I prefer to make it the day before so that the flavor marry and the noodles have time to absorb the liquid. If making more than a day ahead, I recommend waiting until serving time to add the feta cheese. Otherwise it becomes mushy and takes on the color purple, from the Kalamata olive brine and red wine vinegar.

Ingredients

For the Pasta Salad:
16 ounces spiral pasta
2 cups diced cucumber
1 cup cherry or grape tomatoes, halved
1/3 cup chopped red onion
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1/2 cup halved Kalamata olives
1/2 cup crumbled feta cheese

For the Salad Dressing:
1/4 cup red wine vinegar
1/4 cup olive oil
1 tablespoon fresh lemon juice
1 tablespoon brine from Kalamata olives
1 teaspoon dried oregano
1/2 teaspoon Kosher salt
1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package directions, then drain and rinse with cool water.
  2. In a small bowl, whisk together the red wine vinegar, olive oil, lemon juice, Kalamata olive brine, dried oregano, Kosher salt, and black pepper.
  3. In a large bowl, combine the pasta, cucumber, grape tomatoes, red onion, bell peppers, and Kalamata olives. Pour the dressing over the pasta and toss to coat. Sprinkle with feta cheese.

Notes

Healthy Greek pasta salad can be made up to 3 days in advance, stored in a tightly sealed container in the refrigerator. If making ahead, wait until serving time to add the feta cheese. Otherwise the cheese becomes mushy and a purplish color due to the Kalamata olive bring and red wine vinegar.
