Instant Pot lemon chicken thighs

This easy Instant Pot lemon chicken thighs recipe takes boring boneless, skinless chicken thighs and transforms them into a rich, juicy chicken dinner in under 30 minutes total. The chicken is seasoned with garlic, lemon, and thyme, sautéed to a golden brown on each side, then cooked on manual high pressure for 5 minutes. That’s it!

Ingredients for Instant Pot Lemon Chicken Thighs

In a small bowl, combine the minced garlic, dried thyme, Kosher salt, pepper, and lemon zest. 

Lay the chicken thighs flat and brush 1 tablespoon of avocado oil on them, then rub with half the spice mixture. Turn the chicken over and repeat on the other side, using up all the spice mixture.

Set the Instant Pot to sauté and when warm, add the remaining tablespoon of avocado oil. When it’s shimmering and hot, working in batches, add the chicken thighs. Be careful! The oil may splatter as it is very hot. Let the chicken sit 3-4 minutes sautéing in the oil and when golden brown, turn over and cook the other side another 3-4 minutes. Remove to a plate and repeat with remaining chicken, being careful not to crowd. We want to just sear to golden for flavor. The chicken will cook through in the next step.

Once all the chicken is cooked and removed to a plate, turn off the Instant Pot and slowly add the cup of chicken broth and lemon juice. Scrape up all the browned bits on the bottom. Carefully add the trivet to the Instant Pot and return the chicken, layering evenly.

Seal the Instant Pot, set on manual high for 5 minutes. Do a quick release. Enjoy!
