Instant Pot Sweet and Sour Chicken

This Instant Pot sweet and sour chicken tastes just like Chinese take-out. Easy homemade sweet and sour sauce combines bite sized chicken pieces with colorful bell peppers and onions. It makes for an easy weeknight dinner or meal prep for fun lunches for the week.

Ingredients for Instant Pot Sweet and Sour Chicken

Set the Instant Pot to saute, add the coconut oil and when it begins to shimmer, add the chicken thigh pieces.  Saute for 4-5 minutes, stirring occasionally to make sure all sides are cooked. 

While the chicken is cooking, in a medium bowl whisk together apple cider vinegar, ketchup, soy sauce, garlic, and reserved pineapple juice.

Whisk the sweet and sour sauce

Turn off the Instant Pot and add the whisked sauce to the pot, stirring to combine. 

Add the peppers, onions, and pineapple.  Give it all a good stir, then put on the lid, seal, and set to high pressure for 3 minutes.

After the 3 minutes is up, turn the pot off and let it natural release for 10 minutes, then release the steam valve.

Remove the lid, stir, and set the pot to saute.

While the pot is heating back up, whisk together the corn starch and water.  Add it to the pot.  When the mixture begins to boil, it will thicken quickly.  Once thickening begins, turn pot off.  Serve hot over rice.

Ingredients

1/2 tablespoon coconut oil
2 pounds boneless skinless chicken thighs, cut into bit sized pieces, salt and pepper to taste
¼ teaspoon Kosher salt
¼ teaspoon black pepper
¼ cup apple cider vinegar
⅓ cup ketchup
2 tablespoons soy sauce
1/2 tablespoon minced garlic
2 8 ounce cans pineapple rings, cut into chunks, reserving juice 
2 bell peppers cut into 1″ pieces (any colors you choose)
1/2 cup yellow onion chopped into 1″ pieces
¼ cup brown sugar
1 1/2 tabespoons cornstarch plus 1/4 cup water

Instructions
