This juicy chicken leg quarters recipe is super easy and the flavor is amazing. The chicken will be tender and juicy and the skin comes out so crispy! YUM! Chicken leg quarters are relatively inexpensive and I stocked up on a whole bunch of them that were on sale last week and then marked an additional 30% off due to it being the sell-by date. They made for a super easy sheet pan dinner!

    Gather up your ingredients.

ingredients for juicy chicken leg quarters

Preheat the oven to 375 degrees and line a sheet pan with aluminum foil. Place a baking rack on top of the aluminum foil. (this helps the air circulate underneath the chicken and aids in easy clean up)

Without removing the skin from the bone, peel it back to expose the meat underneath. Brush the exposed chicken meat with soy sauce, then sprinkle half the garlic salt seasoning and dill onto the meat.

Place the skin back over the meat, then brush the chicken all over with soy sauce and sprinkle remaining seasoning on the top and bottom of the chicken. Place the seasoned chicken on the baking rack.

Roast the chicken at 375 degrees for one hour, then turn the heat up to 400 degrees and cook for 15 additional minutes. Chicken is ready at 160 degrees. Allow chicken to stand for 10 minutes to redistribute the juices. Enjoy!
