Keto Breakfast Sausage and Kale Frittata

This easy Keto Breakfast Sausage and Kale Frittata with vegetables and lots of cheese makes for a perfect breakfast, brunch, or even dinner. It also makes for a great meal prep for later in the week. The slices of frittata heat up very nicely in the microwave for a quick, healthy low carb meal.

Gather up your ingredients.

Preheat the oven to 350 degrees.

In a large cast iron skillet set to medium heat, melt butter and add breakfast sausage. When the sausage is mostly cooked through, stir in the kale, allowing it to slowly wilt.

When the kale is bright and beginning to wilt just a bit, add the onion, bell pepper, and broccoli. Set heat to medium-low and allow the vegetables to begin to soften, about 3-4 minutes.

While the vegetables are softening, whisk the eggs with salt and pepper. Add in one half cup of shredded cheddar.

Stir the sausage and vegetables and then ensure they a nice, even level in the pan.

Pour the egg and cheese mixture on top. The egg should spread evenly throughout the skillet. Allow the egg to set around the edges, about 3 minutes.

Add the additional half cup of cheese on top. 

Place the skillet in the oven and cook 18 minutes, or until eggs are completely cooked. Enjoy!

Leftover frittata will stay fresh in the refrigerator in a sealed container for up to four days. If you’d like to make this a meal prep, simply portion out slices into individual containers before refrigerating. If you’d like to freeze leftovers, simply add individual slices to a freezer bag and store for up to 3 months. (when freezing, I recommend putting frittata pieces in individual freezer bags, then putting them all in one container so they don’t get squished when you are moving things around in the freezer.)
