Keto Breakfast Sausage and Kale Frittata

Delicious keto breakfast sausage and kale frittata. Easy to make, perfect for breakfast, brunch or dinner. 



1 tablespoon butter
1 pound breakfast sausage, sliced into 1/2" rounds
4 cups kale, ripped into bite-sized pieces, stems removed
1/2 cup chopped onion
1 red bell pepper, chopped
3/4 cup broccoli florets
12 large eggs
1/2 teaspoon Kosher salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese, divided


  1. Preheat the oven to 350 degrees.
  2. In a large cast iron skillet set to medium heat, melt butter and add breakfast sausage. When the sausage is mostly cooked through, stir in the kale, allowing it to slowly wilt.
  3. When the kale is bright and beginning to wilt just a bit, add the onion, bell pepper, and broccoli. Set heat to medium-low and allow the vegetables to begin to soften, about 3-4 minutes.
  4. While the vegetables are softening, whisk the eggs with salt and pepper. Add in one half cup of shredded cheddar.
  5. Stir the sausage and vegetables and then ensure they a nice, even level in the skillet and pour the egg and cheese mixture on top. The egg should spread evenly throughout the skillet.
  6. Allow the egg to set around the edges, about 3 minutes. Add the additional half cup of cheese on top. 
  7. Place the skillet in the oven and cook 18 minutes, until eggs are completely cooked. Enjoy!
