This lobster pasta salad is a perfect summer salad for lunch, dinner, or as a side for a family bar-b-que. It’s indulgently creamy yet simple. Mayonnaise and sour cream add smoothness and a little lemon zest and sliced green onions brighten it up. I find it tastes best if you make it a few hours ahead and let it chill a bit in the refrigerator.
Gather up your ingredients.
Cook pasta according to package directions. Drain, rinse.
To a large bowl, add lobster, pasta, celery, grape tomatoes, green onions, mayonnaise, sour cream, lemon juice, lemon zest, Kosher salt, and black pepper.
Toss to combine.
Chill for 2 hours for best flavor.
Note: You can buy a lobster and cook it yourself to get the meat for the salad but you can also buy it frozen, with all the hard work already done for you. I bought this lobster as an add-on to my Butcher Box order. It was still frozen when it arrived so I defrosted it in the fridge overnight and cooked it a few weeks later. The lobster meat was raw so I just cooked the thawed meat for about 5 minutes in some lemon and butter in a frying pan. If you can find already cooked lobster meat ready to serve, that’s even easier!
