Mahi Mahi with Aioli

Easy and healthy mahi mahi with aioli recipe with green beans and tomatoes. Healthy fish dinner ready in 30 minutes.



16. oz. mahi mahi (4 fillets)
1/2 tsp. garlic salt
1/4 tsp. black pepper
1 tbs. olive oil, divided
2 c. green beans, chopped in 1" pieces
1 pint grape tomatoes, sliced in half
1 tbs. minced garlic
2 tbs. chopped chives
1 tbs. fresh tarragon
1 tsp. fresh lemon juice
1/2 tsp. lemon zest
1/2 c. mayonnaise


  1. Heat a large skillet on medium. Add 1/2 tbs. olive oil.
  2. Pat mahi mahi fillets dry and season with garlic salt and pepper.
    Add fillets to the skillet, cook approximately 4 minutes per side until fully cooked (145 degrees).
  3. While the fillets cook, chop the green beans, grape tomatoes, garlic, and herbs. Heat a second skillet on medium-high, add the other 1/2 tbs. olive oil and then add the green beans and grape tomatoes.
    Sauté green beans and grape tomatoes until beans brown slightly and grape tomatoes have softened, about 5 minutes.
  4. While the mahi mahi and vegetables cook, whisk together the garlic, chives, tarragon, lemon juice, lemon zest, and mayonnaise in a small bowl.
  5. Top cooked fish with aioli sauce and serve with green beans and cherry tomatoes.
    Serving suggestion:  white rice (optional)


Store leftovers in a refrigerated, sealed container for up to 3 days.
