1 pound boneless, skinless chicken breasts
2 cups cooked quinoa
¼ cup pitted Kalamata olives, chopped
¼ cup finely chopped red onion
1 cup diced cucumber
2 tablespoons finely chopped fresh parsley
1/4 cup crumbled feta (optional)
- Slice baked chicken breasts and divide equally among the bowls.
- Portion 1/2 cup cooked quinoa into bowls.
- Top quinoa with olives, red onion, cucumber, and parsley.
