1/2 c. (1 stick) of butter plus 6 tbs.
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
2 large eggs
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
3 c. rolled oats
1 c. raisins
1 c. chopped walnuts
Heat oven to 350 degrees and line cookie sheets with parchment paper.
In a large mixer bowl, beat butter and sugars until creamy and fluffy.
Add eggs, one at a time.
Add vanilla, combining all until smooth.
In a medium bowl, combine flour, baking soda, cinnamon, and salt.
Add dry mixture to wet and mix slowly until all combined.
Stir in raisins and walnuts.
Using a small scoop, add cookie dough to sheet, leaving plenty of spreading space.
Bake 8-10 minutes or until light golden brown.
Cool on the cookie sheet for about 5 minutes before moving to a wire rack.
