One Pot Ground Beef Stroganoff

I’m still on the kick of not wanting to wash a lot of dishes or leave the house to go to the store. I dug around in the freezer, fridge and pantry and came up with one pot ground beef stroganoff. It’s easy, tasty, and comforting; especially over egg noodles. If you want to keep it low carb, just skip the comfy noodle part.

One Pot Ground Beef Stroganoff Ingredients:

Ingredients for one pot ground beef stroganoff

Heat a large pot or Dutch oven on medium and add olive oil.

Add the mushrooms, sprinkle with salt and pepper to taste and cook until soft, about 5 minutes.  Remove the mushrooms and set aside.

Add butter to the pan and saute the onions for 2-3 minutes, then add ground beef.  Season the beef and onions with salt and pepper to taste, breaking up the beef into smaller pieces as it cooks.  Continue cooking until meat is no longer pink inside.

Add flour and paprika to the meat and onions, stirring and mixing thoroughly.

Add the wine and garlic, scraping up all the browned bits and mixing everything together.  Simmer the mixture until most of the wine has been absorbed/evaporated.  Add beef broth and Worcestershire sauce, then bring to a simmer.

Add egg noodles, cooking for 6-8 minutes, until almost fully cooked.

Remove from heat, stir in sour cream and mushrooms, and top with parsley.  Serve warm and enjoy!

3 tablespoons all-purpose flour
1 teaspoon paprika
1/4 cup white wine
4 cups (1 quart) low-sodium beef broth 
2 teaspoons kosher salt
1/2 teaspoon black pepper
