    Oven Roasted Sweet Potatoes

    Oven roasted sweet potatoes are a healthy, simple to make side dish and are also great for meal prep. Simply toss the sweet potatoes with a bit of coconut oil, salt, and pepper and bake for about 20-25 minutes. Super easy and super tasty!

    Gather up your ingredients:

    Ingredients for oven roasted sweet potatoes

    Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

    Toss the sweet potatoes with the coconut oil, salt and pepper.

    Spread the potatoes out on the parchment paper and bake for 20-30 minutes. When the potatoes pierce easily with a knife, they are ready.

    1 pound sweet potatoes, diced into 1" cubes
    2 teaspoons coconut oil
    salt and pepper to taste

    Instructions

    1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
    2. Toss sweet potatoes with coconut oil and sprinkle with salt and pepper.
    3. Roast at 350 degrees for 20-30 minutes.  Potatoes are ready when a knife easily pierces the potato.
