Peanut Butter Cookies

Easy, delicious peanut butter cookies. Chill dough for 2-3 hours before baking. Makes 2 dozen cookies.

1/2 cup unsalted butter, softened
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1 1/4 cups all-purpose flour

Instructions

  1. Mix softened butter for about 2 minutes, then slowly add in white sugar and brown sugar, continuing to mix until light and fluffy, about 2 more minutes. 
  2. Add the peanut butter, salt, baking powder, baking soda, and egg.  Mix until well-combined.  
  3. Slowly add in the flour mixture, scraping down the sides as needed and mix until just combined.  (Do not over mix.)
  4. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 2-3 hours.
  5. Preheat the oven to 375 degrees and line a cookie sheet with parchment paper.
  6. Using a small scoop, roll the dough into 1" balls, then press down with a fork to flatten a bit and make a criss-cross shape.
  7. Bake for 10 minutes, until edges are golden.  Let cool on cookie sheet before transferring to a wire rack.  

Notes

Be sure to cream the butter and sugars until light and fluffy and don't skip the refrigerating part.  It's worth it for these delicious peanut butter cookies!
