Pork Lo Mein with Asparagus

This easy pork lo mein with asparagus recipe comes together easily and stir-fries quickly. It makes a great fast weeknight dinner and fantastic leftovers. Sliced pork tenderloin is marinated for just 15 minutes before it’s all tossed together in the pan.

Directions:

Slice pork tenderloin in uniform thickness, about 1/2″ thick.

In a medium bowl, whisk together 1 tablespoon soy sauce, 4 sliced green onions, 1 tablespoon corn starch, 1 tablespoon rice wine vinegar, 1 tablespoon olive oil.

Add sliced pork tenderloin to the marinade and let soak for 15 minutes.

While the pork marinates, cook the lo mein noodles according to package directions, then drain and rinse with cool water.

Make the stir fry sauce by combining the cup of soy sauce, sugar, and sesame oil.

Heat the coconut oil on medium in a nonstick skillet. Add asparagus and cook 2-3 minutes until it begins to soften. Add pork tenderloin, stirring and cooking about 5 minutes, until cooked through. Add lo mein noodles and stir fry sauce, heating the noodles through and allowing them to soak up some of the sauce.

Remove from heat and top with remaining slices of green onion.

Serve warm and enjoy!

4 oz lo mein noodles
1 lb. pork tenderloin

2 tsp sugar
2 tsp sesame oil
2 tbsp coconut oil 
1 cup asparagus, cut in 1″ pieces
6 green onions, sliced (divided 4:2)
Salt and Pepper to taste
