Red Velvet Cookies

Red Velvet Cookies

Easy red velvet cookies recipe. Red velvet cookies are filled with cream cheese frosting and taste like they are from a bakery.

8 ounces cream cheese
1/2 cup powdered sugar
1/2 cup unsalted butter
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
2 teaspoons red food coloring
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon Kosher salt

  1. In a mixer bowl, combine cream cheese and powdered sugar. Mix thoroughly, then scrap into a small bowl, cover with plastic wrap, and refrigerate for 30 minutes.
  2. While the the filling is chilling, preheat the oven to 350 degrees and line two large baking sheets with parchment paper.
  3. In a mixer, cream the butter and sugars until smooth and fluffy, about 2 minutes.  Add egg, food coloring, and vanilla extract, scraping sides when needed. Slowly add in the flour, cocoa powder, baking powder, and salt, scraping sides as necessary until all ingredients are nicely combined.
  4. Using a large cookie scoop, scoop the dough and use your hands to form a nice ball. Add the ball of dough onto the parchment lined cookie sheet and use your hand to flatten the dough to about 1/2 inch thick. Add about a tablespoon of cream cheese frosting to the middle, and then pinch the dough back together until it once again forms a ball with the frosting inside. Repeat until all the dough and frosting are used. Be sure to give the cookies plenty of room to spread, about 3-4 inches.
  5. Bake cookies for about 17 minutes. Cookies are done when the top begins to crack a bit.
  6. Let the cookies cool for 10 minutes on the cookie sheet before removing to a wire rack.
