Slow cooker crack chicken is a perfect weeknight dinner, one you can throw together in five minutes before you head out the door to work. When you come home, the smell of this chicken greets you and says grab your fork. You can add versatile toppings like bacon, scallions, cheddar cheese, hot sauce, whatever floats your boat. I think it pairs nicely with some steamed broccoli.
Gather up your ingredients.
Layer the chicken breast in the bottom of the slow cooker.
Sprinkle the ranch dressing seasoning packet evenly over the chicken.
Add the cubed cream cheese on top of the seasoned chicken breast.
Cook on high for 4 hours or low for 8 hours.
When the chicken is cooked, shred with two forks and mix it all around in the slow cooker.
Top with crumbled bacon and chopped scallions. Enjoy!
HINT: When I make this slow cooker crack chicken, I always have leftovers. Yes, they are perfect for lunch leftovers the next day but this chicken is really versatile and you can use up the leftovers in a multitude of ways. It goes great in a salad or lettuce cups. If you want it warm, you can add it to pasta. Just save a little of the hot pasta water and mix it in while warming the leftover chicken to thin it a bit. Throw a bit of cheese on top and you have a whole new meal!
