These slow cooker mozzarella stuffed meatballs are so rich and flavorful you will want to eat them all! The meatballs are made with a combination of pork and ground beef and are stuffed with fresh mozzarella. They sear a bit in a frying pan to get a nice crust and flavor on the outside, then cook for about 5 hours on low in a slow cooker. They are perfect on top of pasta, spaghetti squash, or in a meatball sub.

Gather up your ingredients.

Combine all the ingredients except mozzarella, olive oil, and marinara in a bowl and use your hands to mix it all together.

Using a large scoop, scoop out the mixture and form rounded meatballs with your hands. Depending on the size of your scoop, it should make 12-15 meatballs. 

Press a hole in the meat, add a piece of mozzarella.

Pinch the meat closed around the mozzarella, then reshape into a ball with the mozzarella securely hidden inside.

Warm a frying pan on medium and add the olive oil. Fry meatballs in batches until the outside of the meat has lightly browned. You don’t need to cook it through. It will cook thoroughly in the slow cooker. You just want to caramelize the exterior of the meat to give the meatballs the best flavor.

Add the meatballs to the slow cooker, cover with sauce, and heat on low for 5-6 hours.

1 lb ground beef
1 lb ground pork
1/4 cup grated Parmesan cheese
1 cup Italian style breadcrumbs
3 large eggs
1 teaspoon Kosher salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1/3 cup chopped fresh parsley
1/2 teaspoon dried oregano
4 ounces fresh mozzarella, divided into 15 pieces
2 tablespoons olive oil
2 jars marinara 

Instructions

  1. Combine all the ingredients except mozzarella, olive oil, and marinara in a bowl and use your hands to mix it all together.
