Slow Cooker Mozzarella Stuffed Meatballs

Slow Cooker Mozzarella Stuffed Meatballs

Slow cooker mozzarella stuffed meatballs made with ground pork, ground beef, and fresh mozzarella. Simmered to perfection in the slow cooker with sauce.

1 lb ground beef
1 lb ground pork
1/4 cup grated Parmesan cheese
1 cup Italian style breadcrumbs
3 large eggs
1 teaspoon Kosher salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1/3 cup chopped fresh parsley
1/2 teaspoon dried oregano
4 ounces fresh mozzarella, divided into 15 pieces
2 tablespoons olive oil
2 jars marinara

  1. Combine all the ingredients except mozzarella, olive oil, and marinara in a bowl and use your hands to mix it all together.
  2. Using a large scoop, scoop out the mixture and form rounded meatballs with your hands. Depending on the size of your scoop, it should make 12-15 meatballs.
  3. Press a hole in the meat, add a piece of mozzarella and then pinch the meatball close and use your hands to make it round again.
  4. Warm a frying pan on medium and add the olive oil. Fry meatballs in batches until the outside of the meat has lightly browned. You don’t need to cook it through. It will cook thoroughly in the slow cooker. You just want to caramelize the exterior of the meat to give the meatballs the best flavor.
  5. Add the meatballs to the slow cooker, cover with sauce, and heat on low for 5-6 hours.
