    Slow Cooker New England Pot Roast

    Slow cooker New England pot roast is a perfect Sunday dinner. Take a few minutes to sear the meat on all sides before adding to the slow cooker and you will be rewarded with such delicious flavor at dinner time. It's a perfect, hearty meal for fall, especially with some freshly baked bread to soak up the gravy.

    Slow cooker New England pot roast is a perfect Sunday dinner. Take a few minutes to sear the meat on all sides before adding to the slow cooker and you will be rewarded with such delicious flavor at dinner time. It's a perfect, hearty meal for fall, especially with some freshly baked bread to soak up the gravy.

    Gather up your ingredients.

    Ingredients for Slow Cooker New England Pot Roast

    Heat a large skilled on medium-high and add coconut oil.  While the oil heats, salt and pepper the roast.  When the oil is hot, sear the roast on all sides.

    To the slow cooker, add potatoes, carrots, celery, and onions, spreading them evenly across the bottom of the slow cooker.  Place the chuck roast on top of the vegetables.  Mix horseradish and water together and pour over the roast.

    Cover and cook on low for 8-10 hours, until the vegetables and beef are tender.

    Ingredients

    3 pounds chuck roast, trimmed of excess fat
    1 tablespoon coconut oil
    2 large russet potatoes, quartered
    3 cups thickly sliced carrots, about 2" each
    1 cup thickly sliced celery, about 2" each
    1 cup yellow onions, quartered
    3 ounces prepared horseradish
    1 teaspoon Kosher salt
    ½ teaspoon black pepper
    1 cup water

    Instructions
